Since Ménad Berkani joined Niccolo Changsha, the hotel has applied a global vision and philosophy into the local marketing with several new food & beverage delicacies introduced at Niccolo Kitchen, The Tea Lounge and Bar 93. Located at Level 93 of Niccolo Changsha, Ménad creates stylish table art and a new exciting culinary experience for food connoisseurs around the world and in Changsha.

贝卡尼总厨引入古老的火山石烹饪技艺精髓,融入法式美食艺术灵感,甄选战斧牛扒,法国鸭胸肉,银鳕鱼三款上品食材,为欣厨带来令人新奇的热石料理。厨师在制作料理时,将食材由生烹至熟的最后一个步骤,交予火山石的炙热来完成,在短暂的聚热和冷却间,达成恰到好处的温润口感,完成惊艳的味觉升华。热石料理的每道食材分别搭配法式焗土豆、紫薯以及烤土豆和多样的时蔬沙拉,再分别配以两种欣厨特调酱汁以套餐的形式呈现,带给宾客两种完全不同的味蕾体验,以简约环保的烹饪方法倡导健康的饮食及生活方式。其中特别值得一提的是,法式鸭胸肉在腌制的过程中加入了红酒,去除了多余的腥味,保留了鸭肉的浓郁和鲜美,搭配上创新的四川辣椒汁和经典的蜂蜜芥末酱,在欣厨以一道热石料理就能探索中西结合的两种迥然风味。
Ménad Berkani infuses inspiration from French cuisine with ancient volcanic stone cooking concepts to create luxurious delicacies including Tomahawk Steak, French Duck Breast and Cod, served on red hot exciting Hot Stones at Niccolo Kitchen. When preparing the dishes, the chef leaves the final step of cooking the steak, duck and cod on the searing hot stones. The quick application of direct heat elevates flavours and culinary theater. Each main ingredient of the hot stone cuisine is paired with French baked potatoes, purple potatoes or roasted potatoes and a variety of seasonal vegetable salads, accompanied by 2 tailored sauces to bring different taste experience to guests. Presented in the form of a set meal, using a simple and environmentally friendly cooking method, this promotes a healthy diet and lifestyle. It is particularly worth mentioning that the French Duck Breast is marinated with red wine, enhancing the odor, flavour and retaining the richness of the duck meat. Paired with innovative Sichuan chili sauce and classic honey mustard sauce, guests will explore 2 completely different flavours of the Chinese and Western cooking methods.
