Roast goose pastry

老婆饼里没老婆,可是这一口烧鹅酥里,却真的有烧鹅!不禁要为大厨的“独具匠心”点个赞。
用猪油和面粉揉成的天鹅酥皮,薄薄一层,用手一捏就会掉渣!里面藏着烧鹅肉丝、冬菇丝、杏鲍菇丝,菌香鹅香交织,无与伦比。
其中烧鹅肉丝来自餐厅每市现做的烧鹅,选用六斤重的黑棕鹅,用秘方把脆皮烧得如同玻璃一样会反光。这样有着“玻璃烧鹅”的烧鹅酥,必须人手来一只!
Many Chinese snacks are named after their legends or the shapes. For example, there is no ‘wife’ in wife pastry. However, this creative roast goose pastry is stuffed with the meat of roast goose.
The puff pastry, made of pork fat and flour, is thin and crispy. The stuffing includes the blend of shredded roast goose, black mushrooms and king oysters mushroom.
The goose weighing around 6 kilograms is roasted by the culinary team during meal time. Once roasted, the skin of the goose is crispy and light-reflective like glass, and gains the name of ‘glassy roast goose’. This pastry is highly recommended!

②会爆浆的燕窝煎堆
Bird’s nest sesame soft ball

有了燕窝的加持,煎堆的身价蹭蹭蹭地往上升,这大概可以称得上是“煎堆中的LV”,多点几个,立马就能吃回本。
咬上一口,晶莹的燕窝携同金黄的流沙喷涌,真的会爆浆哎,口感超棒哒!
The sesame soft balls in the bird’s nest make it a much valued and luxurious dish. Having several sesame soft balls surely deserves the price.
A bite of the crystal bird’s nest and golden liquid stuff presents a nice mouthfeel.

③原只南瓜薏米百合粥
Semen coicis and lily congee in a whole pumpkin

当天热想吃口清淡时,不妨试试这道“原只南瓜薏米百合粥”。
选用日本进口的栗子南瓜,每只四两重,用15分钟的时间蒸熟,一口软糯,真的像吃栗子般香甜。
打开南瓜盖,里面是熬得绵软滑润的薏米百合粥,喝了皮肤会变超水灵哦。最后,请记得一定要把南瓜肉挖空,方不负这份清雅的美味。
If you want to taste something light in summer, try this congee. It is made from the Japanese pumpkin with a weight of 200 grams. After being steamed for 15 minutes, the pumpkin tastes sweet and creamy like chestnut.
The smooth semen coicis and lily congee in the pumpkin is good for skin. Remember to eat the tasty pumpkin as well.

④六六大顺:源自香港的雀笼点心
Bird cage dessert originated from Hong Kong

双层雀笼优雅玲珑,韵味古典又带着闲适的田园风。伴着点心出场,让饮茶极具仪式感。
打开雀笼,两层装着六件“贵气逼人”的点心,有鲜鲍烧卖皇、潮州蒸粉果、安虾咸水角、铂金核桃包、七彩鲜奶羹、澳门焗葡挞,“六六大顺”的意头,广东人都爱。
The elegant double-layer bird cage container is classic but pastoral. When the dim sum is presented in the bird cage, it makes yum cha like a solemn celebration.
A total of 6 dim sums are placed on the two layers and can be tasted after opening the bird cage, including Fresh abalone siu mai, Chaozhou-style steamed dumpling stuffed with meat and peanut, fried mixed puff with meat, Pork chop bun, Portuguese egg tart, Portuguese egg tart. The number 6 has the same pronunciation of ‘smoothness’ in Cantonese language, and is one of the favourite numbers of Cantonese people.

⑤考验火候功力的金鸡咸水角
Rooster ham sui gok (fried mixed puff with meat)

金鸡独立的得意造型,让传统的咸水角立即俘虏人心,忍不住让手机先吃。外酥内糯的原因无它,就是要用中火慢慢炸透,里面是猪肉冬菇沙葛韭菜馅,非常惹味。
In a shape of a rooster standing on one foot, the puff is uniquely eye-catching for taking photos. The secret of crispy crust and creamy stuffing is mixing the stuffing with pork, black mushrooms, turnips and chives on medium heat while in the process of frying.

⑥用泰国金枕榴莲做的榴莲酥
 Monthong durian pastry

好吃的点心,绝无花假。譬如这一道好评指数五颗星的榴莲酥。用每日现剥的泰国金枕榴莲打蓉,咬开会掉渣的薄酥皮,就是没有任何添加纯果肉的榴莲馅,绝对的下重本。
This is a five-rate durian pastry made of freshly mashed monthong from Thailand. Coated by the crispy puff pastry, the stuffing is all durian without any additional fruit.

⑦真材实料的杨枝甘露
Mango pomelo sago

杨枝甘露要做得好吃,选芒果很重要,有经验的师傅会挑选熟一点的芒果,汁水丰沛更清甜。
To make nice mango pomelo sago, the selection of mango is crucial. The experienced chef will choose the more mature mango which is juicy and fragrant.

⑧养生党挚爱的药膳凤爪
Herbal chicken feet

挑选个大肥美的鸡爪,连同党参、当归、薏米、枸杞熬煮一个小时,软糯脱骨的鸡爪里有淡淡的药材清香,可以提神补血,佛系养生就选它。
Simmer large chicken feet with codonopsis, angelica, semen coicis and wolf berry for one hour. The chicken feet become tender and leave the bone with a light herbal scent. It is said to be refreshing, hematinic and good for health.

⑨黯然销魂干炒牛河
‘Catch your heart’ stir-fry rice noodle with beef

炒牛河的灵魂,就在于餐厅秘制的酱油。上好的生抽,加入师傅的独家调料重新煮过,河粉上色,薄透金黄,一上桌,香气撩人心扉,果真“黯然销魂”。
The soul of rice noodle is the soy sauce which is produced with premium light soy sauce in a special way. When the thin and golden rice noodle is presented on the table, the soy sauce helps form good colour and scent on the rice noodles, and catches your heart and soul.

⑩HAPPY ENDING的酥皮菠萝包
Pineapple crisbread

每天现烤的菠萝包,一出场就如同金色暖阳。酥脆的外皮和松软的面包在口腔里迅速融为一体,吃完还想再来一个。
