[Macau, 1 November 2021] – Experience a culinary celebration of seasonal hairy crab this autumn at Grand Lisboa Hotel’s renowned three Michelin-starred Chinese restaurant – The 8. The award-winning team of chefs has selected the most premium of freshwater hairy crabs from Yangcheng Lake in Suzhou, famed for their sweet flavour and buttery roe. From now through the end of November 2021, Executive Chef Joseph Tse and Dim Sum Head Chef Yah Wah Fai of The 8 are pleased to present the special menus of handcrafted Dim Sum with Hairy Crab Roe and Hairy Crab Delicacies for guests to enjoy throughout both lunch and dinner.

Handcrafted Hairy Crab Dim Sum

The 8, renowned for its innovative and meticulously handcrafted dim sum dishes, is presenting hairy crab-inspired dim sum creations this autumn. Guests are welcome to indulge in delicately prepared dim sum topped with hairy crab roe available during the lunch period, such as Steamed Shanghainese Dumplings with Hairy Crab Roe; Vietnamese Spring Rolls filled with Shrimp, Black Fungus and Hairy Crab Roe; Deep-fried Prawn Dumplings with Hairy Crab Roe; Steamed Cristal Blue Shrimp Dumplings with Superior Broth and Hairy Crab Roe and the Steamed Pea Sprouts Dumplings with Hairy Crab Roe. The highly acclaimed Steamed Shanghainese Dumplings with Hairy Crab Roe and Vietnamese Spring Rolls filled with Shrimp, Black Fungus and Hairy Crab Roe are available for both lunch and dinner

時令大閘蟹美饌

「8餐廳」為喜愛大閘蟹的賓客,精心炮製了清蒸原隻大閘蟹清燉鮮蟹粉獅子頭鮮蟹粉焗大蝦皇鮮蟹粉蒸星斑件鮮蟹粉手拉麵等美饌。其中推介菜式清燉鮮蟹粉獅子頭由8餐廳廚藝精湛的廚師團隊秉承淮揚菜的傳統做法,匠心烹製,濃郁的鮮拆蟹粉配上入口即化的鮮嫩豬肉餡,呈現經典風味。另外,鮮蟹粉手拉麵是由自家制的手工拉麵搭配時令的鮮蟹粉,猶如點睛之筆,再倒入清雞湯,使蟹黃及蟹粉的鮮味進一步提升,油潤豐腴的滋味,讓人唇齒留香。

Seasonal Hairy Crab Delicacies

For guests who wish to enjoy an even more decadent hairy crab dining experience, The 8 will also prepare Steamed Whole Hairy Crab; Double-boiled Minced Pork in Supreme Broth with Hairy Crab Roe; Baked Giant King Prawn with Hairy Crab Roe; Steamed Garoupa Fillet with Fresh Hairy Crab Roe and Handmade Chinese Noodles Tossed with Hairy Crab Roe. In preparing the Double-boiled Minced Pork in Supreme Broth with Hairy Crab Roe, the skillful chefs at The 8 are careful to follow the traditions of Huaiyang cuisine in the preparation of this soup, full of the rich flavours of hairy crab which simply melt in one’s mouth. For the Handmade Chinese Noodles Tossed with Hairy Crab Roe, the noodlesare made from scratch at The 8 and topped with tender and juicy hairy crabmeat. For the final touch, clear chicken broth is poured onto the noodles to enhance the umami of the crab roe and crabmeat.
