广州南丰朗豪酒店日前宣布任命Andrea Zamboni为酒店意廬餐厅主厨Andrea Zamboni负责意廬意大利餐厅的出品,以及厨房的日常运营和管理工作。主厨Zamboni将运用其精湛的厨艺和不断创新的现代烹饪手法,对传统意大利菜进行升级,为宾客带来饱含地道意大利风味的美馔。
Langham Place, Guangzhou recently announced the appointment of Andrea Zamboni as chef de cuisine of the hotel’s Italian restaurant, Alfresco. Chef Zamboni is responsible for overseeing all culinary operations and management for Alfresco, as well as enhancing the Western dining experience at the hotel. Diners will experience authentic Italian flavours through traditional dishes with a modern twist at Alfresco.

Andrea Zamboni来自意大利伦巴第区罗马诺,自15岁时开始他的美食烹饪之旅,近19年的职业生涯足迹遍布意大利和大中华区,包括香港特别行政区、上海、苏州和西安。2016年,主厨Zamboni来到广州的利莫尼餐厅担任餐厅主厨,并在2018年的第一届米其林指南广州评选活动中,为餐厅荣获“米其林餐盘”奖项。主厨Zamboni有幸在不同米其林星级餐厅与多位主厨共事,包括香港特别行政区的8½ Otto e Mezzo Bombana餐厅、意大利的Ristorante La Torre和Da Vittorio餐厅,等等。在不同国家和地区的烹饪经历,使得主厨Zamboni在美食创作上拥有独具匠心的技艺。
Hailing from Romano di Lombardia, Italy, Chef Zamboni started his culinary journey at the early age of 15 and boasts 19 years’ experience in Italy and Greater China, including Hong Kong SAR, Shanghai, Suzhou and Xi’an. He moved to Guangzhou in 2016 and served as chef de cuisine at Limoni, which was awarded a ‘Michelin Plate’ in the first-ever Michelin Guide Guangzhou 2018. Chef Zamboni also had the privilege to work alongside a number of master chefs in Michelin-starred restaurants, including 8½ Otto e Mezzo Bombana in Hong Kong SAR, Ristorante La Torre in Italy and Da Vittorio in Italy, among others. His experiences in different geographic regions adds to his ability to create unique culinary masterpieces.

主厨Zamboni因擅长将传统经典的食谱和风味进行融合、升级作出创新而闻名。他坚信“不断革新正是保留传统的最佳体现,正宗的意式风味料理亦是在变革中变得更为迎合现代人的口味”。他致力于不断从当地的食材中进行挖掘,比如番石榴、莴笋和茶叶,使之与意大利料理相结合。
Chef Zamboni is known for taking classic recipes and flavour combinations and transforming them into new creations. He firmly believes that “Tradition is best preserved with evolution and that authentic Italian cuisine can be revolutionized for a modern palate”. He has strong enthusiasm in sourcing local ingredients that might not normally be associated with Italian cuisine, such as guava, asparagus lettuce and tea leaves.
